I've had a self made kit in a bag for months (grain bill and hops). The recipe came from last year's Tongue Splitter recipe from NB ( their new recipe has drastically changed). I guess I kinda forgot about it. Pulled it out the other day and saw that it has 2# Victory and 1# Aromatic for a 5-gallon batch. I thought that was a little much so I am converting it to a 9-gallon batch by just adding a little more Pale Malt (and hops). I brewed the original kit as my 1st batch and screw it up. Forgot to rinse the Chlorox out of the carboy. It tasted OK once you got past the band-aid taste, but I still dumped it. Twenty batches later I'm gonna try it again!

I'd like a little input as to which of the yeasts listed below I should use. I leaning toward Pacman or Denny's 50. Gimmie your thoughts.....

Jesus, you have like $40 of hops in there at the current prices. I hope you have stocked up from last year.

That being said California Ale is one the best yeasts out there, and not just for IPAs, although they do tend to turn up in them alot.

Brewed an IPA over the weekend with WLP001 based on the advice of a few guys here.

I've brewed IPA's with WLP001/WY1056, WY1187, WLP007, WLP002, and Pacman. Every one of them turned out great. The ringwood had a little fruity ester character (light plum I want to say), as did the WLP007 and WLP002. WLP002 left the beer too sweet, I wouldn't recommend it. WLP001 and Pacman both fermented vigorously, with the pacman taking it a little drier than I wanted (almost 85% attenuation). I'd recommend pacman or WLP001. Whatever you do, make sure you pitch a 2L starter or rack it onto a yeast cake.

Bought it at my LBHS about a month ago. You can still get it online at a few places...

They re-released it because it's part of Brewcraft's Dead Guy Ale kit. My LHBS has 6 or 7 smack-packs in the fridge as of yesterday. If one of you can't get ahold of it, PM me.
