Welcome to the forum! Mead making is indeed wonderful. You can of course add fruits as you are accustomed. What I like to do is to try the various different honeys to see what they bring to a traditional style mead. There are so many hundreds if not thousands of different honeys, each tasting unique, that it can be a lot of fun experimenting with these. At least that's what I will be doing. I also prefer hydromels which is just literally a watered down, lower ABV mead, more like a wine cooler, bring it down to a beer or cider strength, that's what I like, but I know others go the opposite direction and that's great too. I am somewhat of a novice but have won some awards so I know how mead making can be both simple AND delicious. I think you might really enjoy it.
