My Name is Eric.

I am a Novice starting out with brewing. I never really like beer orignally. I live in kansas and grew up with Rednecks, so my beer experiences was the bitter crap from bud and what not. well a few years ago i gained a new friend who had a love for beer. so we would drink different beers and try new ones. and once i had beers that weren't tasteless bitter crap i got the taste for beer and enjoy it every now and again. well i have been considering doing homebrewing for some time now. because before my friend i wanted to try other things and see if there was something better than this crap that Macro Breweries sell. now Homebrewing is only a start. I live in Pittsburg, KS its the SE corner 5 mi from the Missouri border. the closest Micro Breweries are in Kansas City, about 1.5 to 2 hour drive. there is a single Winery just inside Missouri, Keltoi Winery. My boss is a beer fan, he loves beer. and he is a Small business owner, along side his wife(the real boss xD ) well something he informed me on was that a Micro Brewery was something in top section of a list for a survey a couple years ago. To my and his knowledge its still not something happening. Now being the young man that loves "chemistry" I feel The Passion for running a brewery won't die like my spur of the moment decision to enter the IT field.

What i Have currently, a Turkey Frying kit(burner, 5/10 gal pot) and 4 5 gallon Buckets with sealing lids. My My boss and her husband owns a Cakery so i can get 5 gallon Buckets from them every so often. Now, before i start i plan to buy the Homebrew Academy courses and study them so i can do this right. I only Work part time(10 hours) and get minimum wage so i can't go and buy everything today and start brewing tomorrow. I do want to work on modifying my buckets. I would like to use one for Sanitizing, one with a Tap and the other 2 for fermenting. the one witht he tap should be easy enough to attack a tap. but modifying the lids of the other two for an Airlock might be annoying. My only other issue is climate control. my house has no AC and it gets pretty hot. now i have looked at a couple Homebrew academy articles in the blog about climate control with devices. an option i'm considering is a Deep freezer that i can keep between 55-60 degrees. Now, the KS Revenue Micro Brewery license requires atleast 100 barrels(assuming the 55 gallon barrels) of Product a year. And no more than 15,000 barrels a year.

The Plan: Get my Homebrewing down, learn how to do it and how to experiment. start working on a good beer. first step up will be a small work space(garage/shed) that i can set up for my brewery. then within 2 years so long as business is increased i want to move into a larger Building with a Bar area and run a Micro Brewery/Tavern =]

Correction, just checked the buckets. they are 4.25 Gallon buckets. I should still be able to do 3 gallon batches. and if i get another bucket or something else for the sanitizer storage, I can have 3 buckets for Fermenting. that way i can do 2 batches staggered so i have that extra bucket for a secondary fermentation if i need it.
