Hello there!

My name is Nicholas Bering. I'm 23 years old, and I'm a - let's see... great grandpa, grandpa, dad, me - fourth generation farmer. My profile will tell more about how I got interested in beer craft, but what finally pushed me over the edge so that I actually went out and bought the equipment was a desire to be self-sufficient. It's impossible to be entirely so, but its worth a try, right? I'm on a farm, so I have virtually unlimited access to grain, land and fertilizer to grow hops, an understanding of cultured yeast from the 2 years that I made all my own bread... in theory, I should be able to make my own beer from scratch. Baby steps, though. I'm starting with a 23L glass carboy that's sitting in my kitchen, brewing Cooper's Dark Ale, from a hopped malt extract. Next step will be to start from individual malt extracts, and hops. Or, from malted grain. Etc, and so on. I'm sure you guys know more about this stuff than I do.

Anyway, I stumbled upon this site while Googling for specific beer info. Basicly, I typed in "Homebrew Foam Coming out of Air Lock," and found a nifty tip on how to make a blow-off system that could handle large amounts of foam. Saved the day. Got this forum on a couple of other searches, too, so I bookmarked it and joined.

Great to have you on board. Welcome to home brewing. So much to learn and so slow before the first batch is ready:).

I'm from Niagara, by the way. St. Catharines to be more specific, about a 20 minute drive from the Niagara Falls.
