I've never seen this when brewing but i've brewed less than 10 times and the last time was about 2 years ago. New scoby now, and first, this strange brain/umbilical looking thing has emerged. Also the top has formed a murky layer. The scoby remains floating sideways in the middle of the jar. Thoughts?

Yep.
Mold looks fuzzy or hairy and is the only pathogen you would need to worry about if using standard practices.
