Picking up cider from an orchard to make hard cider. 5 gallon worth, yeast suggestions, and should I put some type of sugar, I was thinking honey, or just depend on the fruits sugar. Also if I put more sugar in how much per gallon?
 
I like Nottingham yeast for lower abv ciders.

Sugar additions will depend on what abv you want.

Cysers (apple juice and honey) are very tasty. 1-2 lb / gallon is good.

General tips.......Be clean, use nutrients, aerate well before you pitch. Don't rush the process, use your hydrometer to check the progress, keep your fermentation temps low if possible (under 70)
