So brewed Thursday and pitched one pack into a 1.075 neipa at 85 deg. It’s been in my garage with blankets around the fermenter for 2 days now. Still has a Krause but bubbling has def slowed. When should or how should I handle the diacetyl rest. Should I leave it in the garage no matter for say 5 days then put it in the basement to chill down before I dryhop or it bubbling really slows Tomm move it then. My basement is like high 60’s right now and it’s been hot here lately so I’m guessing this has been fermenting in the high 80’s to low 90’s. I couldn’t believe how warm to the touch the fermenter actually was when I got home from work this morning.
