New mead maker here -- had to do something with some of our honey! (We keep a few hives of bees.) Huge fun. I'm enjoying Make Mead Like a Viking, by Jerome Zimmerman. I've made a couple of batches of small mead and am looking forward to blackberry season when I can capture some more robust yeasts and play around with melomels.
Other fermentation hobbies are making rye bread with a sour I've had going for a few years, and messing about with kimchee (Sanitation! It's important! Don't ask me how I know.)

Welcome from Oklahoma.

As a southern boy, there’s nothing like blackberries. I made a blackberry mead years ago, it went fast.

Good to know. In a good year, we're buried in blackberries. I did some major maintenance on the patch this fall, though, so who knows what kind of yields we'll get this year.
