Very light, refreshing fruity ale with assertive lemon notes that mellow with time
Malt

6 oz. Crystal 10L - steeped 30 min.
1 lb. Light DME - 60 min. boil
3.3 lb. Maris Otter LME - 10 min. boil
3.3 lb Light LME - 10 min. boil

Hops

1 oz. Centennial pellet hops (8.7% AA) - 60 min. boil
1/4 oz. Amarillo pellet hops (8.7% AA) - 30 min. boil
1/4 oz. Amarillo pellet hops (8.7% AA) - 15 min. boil
1/4 oz. Amarillo pellet hops (8.7% AA) - 5 min. boil
1/4 oz. Amarillo pellet hops - 7 day dry-hop
1 oz. Sorachi Ace pellet hops - 7 day dry-hop

Whirlfloc tablet - 15 min. boil

Safale US-05 Dry Ale yeast

Steeped 1/2 oz. loose-leaf green tea (I used Hampstead organic green tea) in 1 qt. boiled water for 5 minutes and added at bottling time.

Notes

- Late additions of the LME are key in getting the light color of this beer.
- Don't let the tea leaves steep much longer than 5 minutes, or else the tea will just taste like you juiced a bunch of weeds out of your garden.
- Seemed "green" (no pun intended), hazy, and undercarbed at 1 month after bottling, but it cleared up and really hit its peak at 2-4 months.
- The Sorachi Ace dry-hop is almost overpowering at first, but once it has some time to mellow it blends a lot better. In the future, I might use only 1/2 oz. or substitute something like Citra instead.
