Making a Belgian Dubbel, BIAB. Recipe preboil gravity was 1043, I hit 1038. I had to add .38lbs Belgian candi syrup, and .25lb table sugar in the boil, which would shoot the OG to 1076. At 15 mins left, I removed from heat, added and stirred the sugars and whirlfloc, put back on the flame to finish out the boil. My OG was 1052, which oddly enough is what the OG would be for the recipe if the damn sugars weren't even added.

I know not to worry too much about gravities, but what could have happened...be so close preboil, then completely miss OG with the added sugars?
 
I would say, do you raise your temp to 168-170*F before pulling your bag and do you squeeze the living daylights out of it?

I have no problem getting an 81% efficiency out of a FULL volume BIAB, even with yesterday's 10/23/11 brew, see link below.

What is your pot size and technique?
