I happened to be by the home brew store and had them prepare my grain, but I don't think I'll get to brewing until this upcoming weekend. Will week old grain cause a noticeable difference in the beer taste?
 
I wouldn't worry about one week. If it's crushed, I'd maybe put the grains in a gallon zip-loc bag and keep them in the fridge. If you order a recipe on line, it sometimes can take a week to get to your door. Grains are like any food product. They generally deteriorate with age, but I wouldn't sweat a week.
 
I have some crushed grains sitting in a brown paper bag that have been sitting for three months.

I hope they work. A week is nothing. You are much more likely to get off flavors from using malt extracts that come from the bulk syrup barrels. Good luck.
 
I'm going to the LHBS today to purchase and crush grains for a brew this weekend. 2 months (crushed) I'd start to worry, but I have read here about brewers that routinely do bulk purchases and store the (uncrushed) grains in the proper conditions for up to a year. A week is nothing to be concerned about. I personally do it routinely.
