I'm intending on brewing my 4th batch of brew today. The first attempt flopped due to lack of cranial intervention. The 2nd & 3rd are delicious. Now I'm gonna ask my SQOD (stupid question of the day). I'm looking for Alexanders Pale Malt Extract for a recipe I found online for a Winter Cream Ale. Hypothetically speaking, Alexander's is not immediately available... can I substitute another Pale malt extract or are there qualties to this particular brand that lends to lactic acid or something?
Ingredients:
8 pounds, Alexanders pale malt extract
1/4 pound, Crystal 40L (light)
1/4 pound, Crystal 80L (medium)
1/2 ounce, Chinook (12%), 60 min. boil
1 ounce, Cascade (5.5%), 30 min. boil
1 to 1--1/2 ounce, Cascade - Dry-hopped
Wyeast #1056 American Ale Yeast
3/4 cup, corn sugar to prime
