I'm interested in making my first mead and would like some suggestions on a tasty and simple recipe. I suppose a more traditional, not too dry, mead would be what I'm looking for, but the idea of a melomel sounds mighty enticing. I have access to orange blossom and wildflower honey. Ideas?

nearly everyone here is going to direct you to a JOAM, MOAM veriety. If you're looking for good...and you have the nerves to wait it out:

3# of that Orange Blossom per gallon of water.
1 tsp Yeast Nutrient Per Gallon
1/4 tsp Yeast Energizer Per Gallon.

Dont' Boil it....just mix it with the hottest water that'll come out of your tap.
Shake like hell till you cant' shake any more.

Add a pack of Cote Des' Blanc Yeast for the first 5 gallons (even if it's only 1gallon) and then rack it in about 8 weeks, AGAIN in like 4 months, bottle when you're ready, break it out for 4th of July 2009!
