- Everything on point & absolutely delicious. Rye, hops, body, crisp.
Enjoyed most of this batch pretty early, good stuff, but just cracked open some stragglers after aging them in bottles at room temp for 2.5 months and it's now one of the best beers I've ever made. Go figure.

0.5 oz Columbus, 60 min
0.25 oz First Gold, 10 min

Mash 60 min at 150F
Acidify both mash and sparge water for pH of 5.4.
Water profile additions to mash, for final profile of:
