I drank a bit of Matzo's wild lime and ginger cider on holidays a few months back and would really like to try making something inspired by that. I've only make kit ciders and the infamous Caramel Apple cider so far (fairly sucessfully if I do say so myself!). I was wondering if anyone had any suggestions on whether I should do an experiment from juice, or from a kit?

I was thinking to add maybe 100g ginger - I like it to have a definite ginger taste but not too overwhelming. And maybe the zest of a few limes? Anyone had a go at anything like this before?
