I have started an experimental 2 gallon batch of cider. I want to make something similar to Two Towns Ginger Ninja. Any thoughts on how much fresh ginger juice I might want to add?
 
make it, or check out the ethnic section of your local supermarket.
 
Yeah I'm making fresh ginger juice. I'm wondering how much to use and if I want to add it in primary or secondary fermentation.
 
I've got a good friend who makes a rockin ginger ale. He tells me he uses a pound of ginger per gallon. It is very intense, so I would shoot below that number if you want any of the cider to come though. Maybe 1/4 pound per gallon, and test it.
 
How did this experiment come out? This is my wife's new favorite cider, damn good too IMHO! Anybody have a good dry/kinda sweet cider recipe like this?
