I'd like to try a homemade ginger ale soda. Here's my thoughts, let me know your opinions;

4 gallons water
4 pounds of sugar
3-4 ounces fresh ginger, grated.

Boil together for about 20 minutes. Quickly cool.

Rack to Corny and add juice from 2 limes and 1 lemon.
Add another oz fresh ginger and hit with CO2.

I usually make ginger beer, but the recipe looks solid. Ginger amount might need a little tweaking, but that sounds close.

Why no boil on the lemon/lime? Trying to keep as much aroma as possbile?

Let us know how it turns out or if those amounts were exactly what you were aiming for.

I made a ginger hefe that had (IMHO) enough ginger flavor, any more would have been a bit much... I added 2oz of ginger to the boil for a 5gal batch. Just added .5oz to my pumpkin ale... which is a work in progress/experiment.
