Saturday is “Cider Day” at a local brewery and I have pre purchased 6 gallons. 4 gallons are reserved for a spiced graf but I will unfortunately not have the remaining supplies for that brew until Monday.

What are the steps needed to preserve my juice until Monday? My apologies, this is my first cider home brew.
 
I would just keep it cold. For ciders you usually add a camden tablet per gallon 24 hours before pitching to help keep wild yeast from getting started. With that timeframe, you're already starting your cider/graff on Sunday.

Another option for the cider portion is to just let the wild yeast ferment it for you. Hope this is some help. Cheers!
 
I'd say add the campden Saturday when you get it home. As long as it's in a sealed (or airlocked) container, the extra day won't be a problem.
