I'm planning on doing a German style lager soon I'm gonna do a grain bill of
95% pilsner malt
5% acid malt
.5oz hallertau 60 minutes
.5oz hallertau 20 minutes

I'm thinking like 9 pounds of pilsner malt? 90 minute boil(To ward off the infamous DMS)

I'm probably gonna do a dry lager yeast to keep from making a starter. This is my first lager and my first time not going with a recipe kit. Does everything look in order? I know to aerate the hell out of it

One I heard (though I never used it before) it adds a nice twang to a lager like this. And two isn't mash PH a big deal with pilsner malt? I can drop it if it's pointless and add some other specialty grain.
 
Do 3% acid malt, not 5%. Add some calcium chloride to your water too (1/2 tsp per 5 gallons). If you use distilled water, that will help immensely as well.

I planned on using RO water then go from there. What OG will 9 lbs get me?
