Hey all, I'm thinking of doing a chocolate/cherry stout with an OG of about 1.070 and a FG of about 1.018. I've got a recipe that uses cocoa powder and cherry puree, but I'm a little worried about introducing an infection with the cherries.
So I thought I might use cherry schnapps instead. The thing is, I have no idea how much I should add.
Has anybody done this before? Should I just follow the recipe? Any tips about adding cherries to the beer without ruining a batch?
