Hey all, I'm thinking of doing a chocolate/cherry stout with an OG of about 1.070 and a FG of about 1.018. I've got a recipe that uses cocoa powder and cherry puree, but I'm a little worried about introducing an infection with the cherries.

So I thought I might use cherry schnapps instead. The thing is, I have no idea how much I should add.

Has anybody done this before? Should I just follow the recipe? Any tips about adding cherries to the beer without ruining a batch?

Look for Oregon fruit puree it is already sterile just got to sterlize the can and opener before opening it

For german chocolate (at least the americanized version) wouldn't you want some toasted coconut too?
