I already cold crash and am generally happy with the appearance of my beers.
They are fairly clear just not bright. Yes I know it really doesn't matter.
I am considering trying out some gelatin and am wondering if it will slow down the bottle carbing? Does sufficient yeast remain, do I just look at a longer timeframe?

It may take a little longer but it isn't going to significantly affect it. It also depends how long you plan on cold crashing when using gelatin.

For best results I cold crash for 24 hours, add gelatin, then continue cold crashing for 4-5 more days. My bottles are somewhat carbed at 2 weeks but 100% ready to go at 3 weeks.

I've thought about using gelatin on beers, but then my vegan friends couldn't enjoy them with me. Oregon is filled with Vegans.
