Funky bitter taste - cannot figure out

The mash was single infusion at 154 (temp stayed on point) and sparged with 168 for about 30 min.

It was put in the primary for 8 days (active fermentation until 7 days, so I gave 2 days to make sure the FG was not moving) at about 64 degrees, and then transferred to a secondary for 16 days with a 2 stage dry hop (I added a second ounce of Amarillo after 4 days since it was lying around and it not going to be used on any beers in my brew schedule until at least the late summer).

While transferring to the keg, I took a 2 ounce taster out of it. The color was spot on and the smell was fantastic! Sweet, fruity, floral. Then I took a taste. The initial flavor was great on the front of the mouth, but then there was a strong bitterness on the back end which I cannot figure out. It is 70ibus, but it seems something off from that which I cannot figure out.

3 days into the keg, I took another 2oz taster to check on the carbonation and head. Both are right on, but that bitterness is still there.

I'm assuming I just need an aging (especially in light of the high IBU), but its not that its bitter - its the taste of the bitterness that is bugging me. I did a similar beer a few months ago with higher IBU and same bittering hops (except amarillo since it was out of stock and supplemented with Citra) and this flavor was non-existent. Anyone have any thoughts on the off flavor bitterness and what I should do?
 
There are several explanations that come to mind, but see what it tastes like in a couple of weeks.

Too much dry-hop, stale hops, infection ...
