If I am going to do a 5g full boil, I have a 7g pot and want to know what total water to start with as some I'm sure will boil off during boil?
 
I usually start the boil with around 6.5 gallons to finish around 5 - 5.25 after 60 minutes.

Five gallons of water plus anticipated boil off amount in a seven gallon pot. Does not leave you much room for a rolling boil and foaming. I would start with five gallons and top off in the fermentor.
 
I use an 8 gal pot with 6 gal of water. There is just barely enough room for a good rolling boil. I end up with just over 5 gal in the
