I made a Triple Berry Ale last week. I got to thinking on the drive over to my bros for T-giving - should I allow the fruit to sit in the fermenter for three weeks? I guess I'm wondering if there will be spoilage issues - or will the alcohol keep everything clean?

I put in six pounds of frozen blueberries, raspberries, and blackberries - if that matters.

When I did my cherry wheat like that, I racked to secondary after a week, which was a good idea I believe cause when I took the lid off the cherries were white with mold. Transfered it over for 2 more weeks, came out perfect.
