I am currently making a wheat beer and was toying around with the idea of adding fresh citrus juice and zest to the secondary. Is there any risk to this?

The juice may turn your beer sour. I haven't tried it but read that it leads to undesirable flavors. Zest is fine though. Just keep any pith (the white part under the zest) out as it is very bitter
 
I'm looking for some sourness. I'm more worried about the fresh juice shortening the beers shelf life.
 
I would toss it in at flameout. The zest and juice will be sanitized best that way and the juice will ferment out completely leaving the tartness you're looking for. If you do it that way, you won't have to worry about shelf life.
