I've got a gallon of a muscadine melomel that I want to fortify. Does anybody have any information or suggestions on how much liquor I should use? I haven't found much in my own searches thus far.
 
Hi Titus,

Here is a link to a online calculator for how much brandy is needed for fortifying wine. I have used it and it seems very simple

For example, here is a calculation from that site:

To 1 gal of 14% wine you would add 0.3 gal of 40% brandy (80 proof) to get 20% abv fortified wine.

And let me know how it goes, I am planning to do a muscadine melomel as soon as my black Carlos berries are ripe. What recipe did you use?
