I usually do the set/forget and let it carb up slowly over 2-3 weeks but I need my beer carbonated in 7-10 days. I don't want to crank it up to 20-30 PSI for a few days. Can I maybe put it at 15 PSI for 7-10 days and have it ready?

The nice thing with doing this is that if you didn't get a full carb it will be there at the end of the week as you got it most of the way there already. If you over carb it doing this, you can bleed off psi a few times a day as it comes out of solution to equalize pressure. This gives you a week to make adjustments instead of hoping that at the end of the week you will be where you want.
