Flavor differences in LME?

I'm in charge of putting together some basic kits for my LHBS - just steeping grains for recipes - very basic stuff.

We have Mutons, Northwestern and Coopers in all flavors!

Any big differences? Would one be used for English Browns while another for a Pale Ale?
 
I know that I don't care for the pre-hopped extract... it's a bit too bitter IMO.

When I used liquid, which I don't anymore, I used Briess.
 
What are you asking, exactly? Are you asking which flavor to use for which brew? It seems to me that might be kind of obvious... ?

Point me to the products, and I'll see if I can understand enough of what you're getting at to offer any kind of intelligible help. Or whatever. *shrug*
