I've mashed Quaker Instant oats with good results. And no protien rest or any of that, I just dial it in at the target mash temp.

I believe the instant oats are gelatanized already, so no special treatment necessary.

Someone suggested they should be cooked first but I can't get my head around mashing porridge in with my grains. What do you do ?

If you're using flaked oats (like from a homebrew store), they are pre-gelatinized so no need to precook. If you're using oats from the store (not instant), you cook them first and then add that to the mash. So, yes, you'd be adding breakfast porridge to your grains, if you think of it that way!
