First timer just looking for some advice

Hello,
My name is Greg and I am new to this whole brewing thing. I am intriduced through my first Mr. Beer Pale ale kit and kind of looking to expand on my knowledge through this boards. So I will kind of list my questions while they are on the top of my head.

Can i use an old 5 gallon purified water jug for a carboy if i sanitze it and put an airlock on the top?

How do you determine what kind of hops to use for what beer and how much?

Besides experimenting, what are good taste additives that accompany certain beer types (honey, cherry, etc..)? I know that could be a hard question to answer.

Can i use the Mr. Beer kit for the first fermentation stage and transfer it to a carboy?

Any help is appreciated. I am now just searching but i thought i would throw it out there first and then see what i can find on my own as well.

As for the water bottle, it depends on the type of plastic and it's condition.

Water bottle is #7 recycling. I have free access to them.....

Unfortunately, heat and or brewing leach out serious toxins into beer.

Sucks for me too.
