All, my first brew (an autumn amber kit from Midwest) is now 2 weeks in the bottle. For my own curiosity about the progress and process of carbonation, I put one in the fridge last Thursday (at one week) and drank it Friday. It was actually pretty decently carbonated - had a nice head on it - but not what I would call fully carbonated. It was tasty though!
Today, I threw one beer in the fridge at about 7 and tried it at nine, and it slowly "gushed" about half the beer out into the sink. I drank the rest, and the flavor seemed muted. I put one more in the fridge, and plan to open it over the weekend. Should I open tomorrow or wait for Saturday?
The OG was 1.045, and it settled at 1.014 for six days (measured then went out of town, then measured two more times). The 'target' was 1.012-1.014.
So, was there too much fermentable left in the bottle for the full pouch of priming sugar? Will refrigerating longer (couple days) prevent the rest from overflowing? And am I running the risk of bottle bombs?
