I just brewed a batch of Biermunchers Centenniel Blonde.....which will be the first batch of beer I keg. (Been brewing Centenniel Blonde for years...but have been a bottler until now).

I would like to have ready for July 4th. The way I figure it...since this beer is a quick turnaround....I can keg this in 11 days.....Wednesday before the 4th. If I force carbonate at 30 psi for a day....then drop back to appropriate pressure of 10 psi for 2 days....it should be ready for the 4th (I think....:drunk:)

However, I read an article that said you should let beer set in keg at room temp for 2 days before cooling and carbonating otherwise you can have diecetyl issues......saw this in an article. Never read or heard of this before....

Any advise.....can I keg in 11 days...throw keg in kegerator....force carb and drink in 3 days?
