I made up a recipe for a cranberry wheat beer.
all extract.
3 lbs plain wheat DME (45 % wheat 55% barley ) at boil
2lbs Belgian wheat DME (55% wheat 45% barley ) at 40 minutes
1 oz Mt Hood at boil 6.1 AA
1/2 oz. Mt Hood at 5 min. 6.1 AA
Yeast= Safbrew WB-06 pitched at 70 deg.
fermented at 65 deg.
add 2 quarts R.W, Knudson Just cranberry juice in secondary
O.G. was 1.045
F.G. prior to moving to secondary 1.008
I tested and tasted today before racking to secondary and adding the juice.
For such a simple recipe it was surprisingly tasty.
Nice mild hops flavor moving into a light biscuit flavor and finishing with just a hint of clove.
I may brew another batch and finish it right at this same place.
 
You may not get as much cranberry as you wish with that amount if juice. I did a blueberry wheat with a gallon of juice and it was just an after taste. I wish I added a few pounds of crushed blueberries
 
I did a recipe that was only about a 2.3 gallon batch. I went overboard and added a 3Lb can of Blackberry Puree. THAT was too much. I can still taste the beer...but it's the consistency of a smoothie moreso than a beer.
