I may not try this on my first PM, but will this work using PM (I'll be following DeathBrewer's stovetop method)? Is there enough 2-row? I think it is probably about the limit (according to DeathBrewer's method). I got the grain bill from a brewer based on his recipe and scaled it way down to 5 gal.

OG 1.044

2 lb American Two-row Pale (23%)
1 lb 12 oz Barley, Flaked (20%)
1 lb Munich Malt (12%)
1 lb Vienna Malt (12%)
6 oz American Crystal 10L (4%)
6 oz CaraMalt (4%)
6 oz Cara-Pils/Dextrine (4%)
4 oz Victory Malt (3%)
4 oz Aromatic Malt (3 %)

1 lb 3 oz X-Light Dry Malt Extract (14 %)

That doesn't look too bad. According to Beersmith, that grain bill should get you closer to 1.050 so I'd say you are pretty close to your target.

Is it enough 2-row to convert everything? I know I read that generally 2-row should be half of the bill, but I also know that Munich and Vienna can convert on their own, which may make it ok, right? Thanks. Can't wait to get started!
