here is what i am thinking ..

60min boil

mash 45-60min .. 156F

3LB Buckwheat roasted (light)
3LB Quinoa roasted (light)
3LB Millet roasted (light)
2LBS Roasted oats (light)

Hops. I really miss my super up front hop beers so bare with me on my hops


1oz Amarillo 60min
1oz Amarillo 30min
1oz Warrior 45min
1oz Warrior 15min
1oz Cascade 5min

yeast US 05

Misc
Gypsum 60min
Yeast nutrient 5min
Whirlfloc tablet 15min

i do believe i need amylase enzyme? what time do i add this?

and please give feed back .. thanks

Amylase can be used for high adjunct mashes. It can also dry out a beer. Gluten free brews tend to finish dry anyway. You may need more millet to convert the oats. Millet is your diastic powerhouse. I use powerhouse loosely.

Another note, why use amarillo as a bittering and warrior as a finisher? Seems like they should be switched. Just my 2 cents.

thanks for the reply, up millet 1-2lbs? and for the hops not a clue why i'm still learning but makes since to switch them around
