Well my first concern was that the kit said primary takes 3 to 5 days to get down to 1.020 +-5. The instructions say that it should be around 6% ABV which means that the est. OG for the kit should be 1.045 - 1.050 if its supposed to have a FG of 1.000 +-5. My OG was 1.070 so today, on day 5 in the primary, I got a reading of 1.032. The temperature has been 72-74 and the instructions say to put it at 74-78. My guess is that those two factors are the reason that it hasn't gone down yet to 1.020. Anyway, the instructions say to move it to the carboy at 1.020. Is this necessary. Can I just let it get down to TG and then move it from primary to keg to condition? Also, do I have to let it go all the way to TG or can I let it get down to around to 1.005 to try to retain some of the sweetness? Thanks for all of your help.

at 1.005 there wont be much sweetness left. did your kit include unfermentables, like maltodextrin or Lactos? if so, your final gravity probly wont get below 1.020

Yeah I let in get down to 1.002 and it's very very tart

It did not include any unfermentables. I added a packet of splenda to a glass last night and it was much better. No peach taste though
