My original goal was to make a Belgian Dubbel, but I found out that my yeast was bad when I made a starter. I tried to keep it simple and used pilsner malt, candi sugar and carapils. I had some WLP565 Saison Yeast on hand. I let my wort chill over night, and I pitched that so my wort would not go bad. Does anyone think this will turn out bad? I used styrian and hallertauer hops to make 25 IBUs. OG: 1.068.
 
I definitely don't think it will end up bad, that's for sure. I love all of the white labs saison strains, so a basic recipe like that with that yeast as the big flavor should end up having a great belgian funk to it. Let me know how it turns out for you!
 
Sure will. I appreciate the reply. I'll just wait and see how it turns out. It was just I was pissed that I wanted to brew one style and had to improvised and do another. I guess that is the struggle, or beauty of home brewing.
 
Thanks for the reply. I guess that is the struggle and benefit to home brewing. I was just frustrated because I was hoping to make a specific style of beer and had to improvise and make another.
 
Hey man, all that means is you get to brew again! Sounds like a good thing to me!

And some of my best brews have come out of substituting or changing a recipe at the last second based on inventory/forgetfulness.
