Any thoughts? Should I consider consolidating the two late hop additions into one at about 10 minutes? Based on recipes I've seen, this may be the more authentic way to go. What about caraaroma? I've never used it but have heard it can be overpowering. Is 4% a safe amount to use?
Also, I've never used Northdown, what should I expect from this hop?
Other grains I have available(though not all of them exactly fresh): caramel 60, Vienna malt, Munich malt, caravienne.

Thanks for helping an English ale novice.
