I've made two batches so far and they're currently in secondary fermentation. I'm pretty sure i know what went wrong but id like a second opinion.
First one i let get exposed to the air too much so its slightly vinegary.
The next one though, is really bitter. I let it ferment in primary fermentation for 2 weeks mostly due to laziness and a busy schedule.
Should i be racking them at regular intervals?
