I undertook my first all grain today, Hefeweizen. I have to say everything went fairly well.

I hit my first rest temp (122), actually I was a little over but no big deal.

Only problem, really missed my infusion to reach conversion temp (152). I think I grabbed the pot off the burner before it was boiling. Oh well, fixed that.

I was fairly impressed I got around 68% efficiency. Not bad, I think that will go up as get more mashes under my belt.

I planned for it to take all day. It took less than that...6 hours.

Just checked the carboy, have bubbles...ready for blow off.

I just wanted to thank everyone how has answered my questions and everyone who has provided great information here!!
 
good job! hope all turns out well. not sure pro rest is ness. hefes are naturally cloudy. but let me know if it helps with the taste then i will give it a try

I used 40% pilsner malt, it is my understanding that less modified malts (e.g. pilsner) benefit from a protein rest. This is why I did it.
 
Well, checked it this morning...two inches of krausen and bubbles in the blow-off faster than I can count.

What fermentation temps have people had most success with WLP300? I am running between 69-71.
 
That is right where I ran my WLP300, the second brew that I made with saved and washed WLP300 though has VERY LITTLE banana or clove... it is pretty clean in fact. We will see what it is like after carbing for a cpl weeks though. WLP830 starter is going now for, well, who knows when... for my Helles Lager
