Never used mosaic but I like the rest of the hop schedule. I see you hit your trmp but one thing I learned is to always overshoot the mash water by a few degrees. Its much easier to stir or add a bottle of cold water than trying to get it to temp.

Im so glad I went to all grain. It really turned a side hobby into an obsession

I agree with the strike water temp. Much easier to go down then up. I actually did go high by a few degrees with the water to start. 170 water temp into a non preheated tun. Let that sit for about 5 minutes to heat everything. Then mashed in and stirred real good. Hit 151 and after an hour only lost 1 degree. Hit about 70% brewhouse efficiency all said and done. The only problem I had was my equipment profile had me using way too much water and I ended up with about 6 gallons of wort post boil, so OG was a bit low at 1.057 instead of the intended 1.064. No big deal I'll adjust next time. It's all about learning!
