FG going way lower than expected

Hello,
I'm pretty new to AG brewing and now that I have my system set up I've been trying to dial in by brewing Ed's Haus Pale Ale over and over again. Great for my friends to devour the beer, but the last couple of times I've noticed my FG is going way lower.

Example:
OG = 1.052 - Mashed at 153-152, couple times was at 154.
10 Day 68 degree
FG = 1.003 - Should be around 1.011

Is this a major difference?

Should I be crash cooling once I hit the FG of 1.011? It does seem like the beers are coming out a little 'hot'.

One other thing that I noticed I messed up on the last time was I had 5.5% cascade hops so my IBU came in low. That's probably not a contributing factor to the low FG though...

Yeast is a pretty unpredictable thing. If your temps were off more than you think in the mash (cold spots), you could have mashed at a much lower temp overall and ended up with a more fermentable wort.
