A 6 weeks ago I made a mead with 15 pounds of honey for a 5 gallon batch. I didn't take a starting gravity but the gravity now is at 1.020. What should my goal gravity be? Should i pitch more yeast?
It looks to me like you are already at about 11.5% ABV (give or take). The 1056 is probably done, but it is hard to be sure. You may want to keep it under airlock and let it come up to room temperature to see if it will go any further.
