The second brew I ever made was a kit festa Brew Irish red. Best red I ever had, low IBU, taste like caramel as hell.
I did 3 Irish red all grain after and I can't get to the level of caramel taste and smell.
I did:

Too dark and roasted for my taste.
https://www.homebrewtalk.com/f65/irish-red-1st-place-hbt-comp-141086/
Not enough caramel and red color.
And I did https://www.homebrewtalk.com/f65/scottish-ale-80-shilling-2nd-place-hbt-comp-141264/
That one was good, but not a red exactly or enough caramel.
Anyone as an other recipe or some advises to get to that great caramel taste?
