I'd planned on doing a double batch of Kolsch this weekend, fermenting half (with Lutra) in my carboy, and the other half in my conical, under pressure. Unfortunately, the vendor I bought my spunding valve through sat on the USPS package and just dropped it in the mail yesterday, which means it won't get her until Monday. I have 2 15psi PRVs on the conical. Does anybody see a problem with letting it get to 15 psi during the ferment? This will be in my garage - I don't plan on using it to carb. Just trying to see the difference the pressure will make with this Kveik.
 
No issues if the vessel can handle that much...I've done a couple beers like that the keg with 10psi PRVs and just let them ride. Yeast stops dividing at a higher PSI. Something around 40 I think...You can always bleed the PRV periodically.
