Fermenting in A 1BBL unitank

I have an SS Brewtech 1BBL fermenter. I may have gotten a little ahead of myself because I only brew 12 gallon batches. Has anyone here Had less than 25 gallons in a 1BBL unitank? If so, did you have any trouble cooling it? I'm worried the coil won't contact enough of the liquid to keep proper temps.
 
After multiple "experiments" and working with Brewbuilt and SS Brewtech, there has been little consensus. I agree with BrewBuilt (MoreBeer), that the flow rate is the primary issue. I also believe that an unjacketed unitank, here in Florida, is a very bad idea.

Does anyone here use an unjacketed unitank? If so, how do you cool it?
