Is it better to ferment in the glass carbon then the plastic bucket? And if I'm not adding any secondary hops or flavors than there is no point in racking a second time correct?
 
If you feel the need to use a secondary, then go ahead. But... lots of folks here have completely dropped using a secondary and go for a long primary instead. Find what works best for your process, but don't be afraid to give long primaries a try.
 
Fermenting in glass or plastic is a personal preference issue. I prefer plastic,as it won't shatter & send you to the hospital. I don't secondary either,unless I'm oaking or the like. I even dry hop in primary after a stable FG is reached & it's cleared up.
