I'm brewing an American Wheat tomorrow with a Kolsch yeast. My question is this:
I'm going to ferment (for the first time) in my temp. controlled fridge since I have no kegs of beer left. If I want it to ferment at 63 degrees or so, what should I set the temp at? If I set it at 63, will the beer technically ferment warmer because of the heat the fermentation will give off? Sorry if this is a stupid question, but thanks for the help.

I had the same problem. Place the temp controller's temp probe against the side of the fermenter, place an old cloth/rag over the temp probe, then duct tape both to the fermenter. Then just set it and forget it :D.
