I brewed a Munich Helles two weeks ago and pitched a pretty healthy starter of White Labs southern German lager yeast. OG was a little high at 1.058. After two weeks at 54 degrees it's at 1.020. My target FG is around 1.010-12. Would now be the right time to raise the temp to 63ish for diacetyl rest? Keep it there for a few days before crashing to lager?

My last lager did not turn out as well as I hoped so I'm trying to nail this one! Thanks.

I'm not sure, today was my first reading in 7 days. I hope it is so it will get down to the 1.010 goal.

Keep it there until you reach FG and then slowly drop the temp to lager
